Cold weather calls for cookies with a nice hot cup of tea. With that in mind, I decided to share with you this recipe for low carb Stars. I called them stars, but you can give them any shape you want or even mold the dough into a cookie shape 😉

Ingredients

  • 1 medium egg + 1 egg white
  • 3 tablespoons of olive oil or coconut oil (if you use dairy products you can use butter)
  • 90 gr almond flour – I used the Prozis – code MAMAPALEO gives 10% discount on everything (you can exchange it for oat flour – it is not low carb)
  • 45 gr coconut flour – I used the Prozis – code MAMAPALEO gives 10% discount on everything
  • 25 grams of ground flaxseed
  • 1 tablespoon of xylitol – honey or coconut sugar (adjust to taste) – I used Prozis – code MAMAPALEO gives 10% discount on everything
  • 1 teaspoon cinnamon (or to taste)
  • zest of 1 lemon
  • 1/3 vanilla bean scrapings or vanilla extract (optional)
  • 1/2 teaspoon baking powder
  • pinch of salt

Preparation:

Mix all the ingredients very well until you get a malleable dough. Place it between two sheets of greaseproof paper and, using a rolling pin, roll out the dough until it is about 0,5 cm thick.
Use molds to cut out the cookies. Bake in a preheated oven at 200 degrees for about 7-10 minutes. Turn over and let brown for another 2/3 minutes.

Remove from the oven and let them cool on a rack. After cooling, they will be hard on the outside and tender on the inside.

Optional – those with a sweet tooth can also cover with 75% cocoa chocolate or higher, melted in a bain-marie.
